Holiday season is definitely the time to pull out that Mariah Carey Christmas Album. Especially while you are wrapping gifts and stuffing stockings. This year, make sure you have a lot of chill time with friends. Don't toss the post card club and party invitations. Even though they gave em out to everybody, you can still feel like it's VIP. Just make sure your outfit is cool. Try a sequined hoodie like the one below from NYC & Company with a leather mini and some boots. Tights or fishnet stockings optional.
Let's just have fun with food this year. Think "munchies". Don't knock yourself out. Buy eggnog from the grocery store and a crate of goodies like this one below from Sam's Club:
However the dish of this season is the only casserole that's cool. The Dorito Casserole. It's fun and satisfying. I just love Mexican inspired dishes. It's the perfect balance to all the sugary sweets.
Directions:
Heat Oven: Preheat the oven to 350°F.
Cook Meat: In a large skillet, heat oil over medium heat. Add in the onions and cook for 5 minutes. Add in the garlic and the ground beef and cook until the meat is no longer pink, breaking up the clumps with a wooden spoon.
Season & Add Salsa: Add in the taco seasoning, Ro-tel, and salsa. Cook for 5 minutes, stirring occasionally.
Add Sour Cream: Stir in the sour cream evenly and then remove the mixture from the heat.
Assemble Casserole: Pour half of the meat mixture into the bottom of a 9×13 pan. Top with 1/2-cup of the cheese and half of the Doritos. Repeat the process with the remaining ingredients, topping with the remaining 1/2-cup of the cheese.
Cook: Cover the pan with foil and bake for 20 minutes. Then, remove the foil and bake for 10 more minutes.
Serve: Garnish as desired and serve warm!
This dish is supposed to be tasty, easy and laid back, but who knew that Dorito Casserole was so serious?
