She may be on the show "Married to Medicine", but her cookbook is absolutely "Trap Fabulous!" I knew I wanted it when I saw it had a recipe for Creamy Yellowstone Grits. I checked it out of the library for immediate gratification, and it's perfect. It has classic high-end recipes like breakfast frittata and a Moscow Mule. Every recipe is black girl friendly. And every recipe can be realistically tried at least once.
The basic concept and vibe of this cookbook will take your cooking to another level. Soul food for the grown and sexy. You have to pimp out (upgrade) your kitchen and that includes everything from dishes to a cookbook collection. If you have not invested in good cookware, you want something like this 32 piece Gotham kitchen set:
When you read this cookbook, you will be motivated to be more sophisticated in the kitchen. This is the kind of food you want to cook for that special man in your life. This book just ministers to the soul. I say that because it will usher you to that high-end place that seems unreachable without permission. This cookbook gives you permission to go there. You will want to cook these recipes with nicer kitchenware. So take a trip to a strip mall and get creative. Whatever you don't have in your kitchen, you can find it at TJ MAXX at a decent price.
Orange Ginger Glazed Salmon
This is from page 163 from Cooking with Miss Quad.
1 lb skin-on salmon fillets
1 tsp kosher salt
1 tsp black freshly ground pepper
Juice of 2 oranges
5 tbsp honey
1 tps minced fresh ginger
2 garlic cloves minced
1 tsp sesame oil
2 tsp soy sauce
2 tbsp olive oil
1 scallion trimmed and chopped for garnish
Directions:
Season the salmon on both sides with the salt and pepper. Set aside
Whisk together the orange juice, honey, ginger, garlic, sesame oil and soy sauce in a small bowl. Set aside.
Heat the olive oil in a medium skillet over medium-high heat. Place the salmon in the center of the pan and cook on each side for 3 minutes until it releases easily from the pan.
Lower the heat and coat the salmon with the sauce. Allow to marry with the salmon for 2 minutes.
Transfer salmon to a serving dish and garnish with the scallions. Serve with basmati rice of whole-grain pasta.
