Hoppin' John

Crock pot cooking continues into the fall season. Here is another surprisingly tasty recipe slow cooker meal!

1 lb link smoked sausage, sliced

2 1/2 cups chicken broth, divided (can be made with bullion cubes)

2 15 oz cans of black eyed peas, rinsed and drained

8 oz box dirty rice mix

1/2 cup salsa

1/2 cup lump crab meat

Directions:

1. Cook and stir sausage in large skillet over medium heat 5 minutes or until brown.

2. Transfer sausage to crock pot. Add all other ingredients except crab meat to the crock pot.

3. Cook on LOW 3-4 hours or until rice is tender.

4. Add crab meat last and cook until everything is warm. Serve with cornbread.
