1 lb. boneless, skinless chicken tenders
1 c. canned diced pineapple with juice
1 onion, coarsely chopped
1 green pepper, coarsely chopped
3/4 c. Caribbean-style marinade
2 c. canned black beans, drained
1 lb. broccoli, cut into bite-size flowerets
Directions:
1. Combine chicken, pineapple with juice, onion, green pepper and marinade in a large fry pan. Cover and simmer on stove for 35-40 minutes.
2. Add black beans and broccoli. Cook for another 10-15 minutes until chicken and broccoli is done. Serve over rice.
