What's For Dinner?

What this blog is about is, black women and food. As soon as a black woman becomes visible, the first thing people want her to do is to change her eating habits. That's when black women gain weight. Nothing about her physiology is taken into consideration, she is just bullied and she develops chronic illness.


Black women have different body types and nutrition needs. No one needs to make a drastic dietary change without consulting a doctor. If you do and you don't feel good, then something is wrong.


For many of "us" black women, the Saweetie diet will work for you. Yes, I'm a firm believer in the golden arches. I know this diet will make you HOTT! If you ever tried one of those "suicide diets" and broke down and went to McDonalds because you were so "hungry," then I've proven my point.

People are always encouraging "us" black women to embrace hyper plant-based diets that don't work and will kill you. In addition to Mc Donald's, a healthy diet staple in a black woman's diet that people overlook is beans and rice. Fortunately, even beans come frozen like these:



I was at college in Texas and they were offering students free meals. In the Midwest, free meals are simply, hot dogs, potato chips and a pop. But at this school, the free meal was beans and rice. And it was good. Actually, everyone in the entire city ate beans and rice. I'm writing this because I believe it's a BEAUTY FOOD. My mother always told me that beans, rice and cornbread was a complete protein. I think it's the missing link ... especially with chicken wings, oxtails, pork neck bones and turkey legs . What that means is, it's time to get an instant pot which is also a rice cooker. This one by the Pioneer Woman is perfect.



If you cook rice in the Pioneer Woman's instant pot, then it automatically becomes fancy. So does the cornbread. Just watch this recipe for pineapple upside down cornbread.


Aeysha Curry's brown sugar chicken is still an epic recipe. Below is a modified version. Sounds delicious served with beans and rice.



4 chicken breasts cut into bite sized pieces

salt and pepper to taste

2 tbsp butter

2 tbsp olive oil

1 tbsp chopped shallots

3 cloves chopped garlic

3/4 cup chicken stock/broth (made with bullion cubes)

1 cup low sodium soy

2 cups brown sugar

1 heaping tbsp minced ginger


Directions:


1. Preheat oven to 350 degrees.

2. Heat a dutch pot on med high to high heat with your butter and olive oil.

3. Generously salt and pepper your chicken breast. Brown your chicken in the pot for about 2 mins on each side until it's crisp and golden brown.

4. Remove the chicken breast and reduce the heat to medium. Add in the shallots and garlic.

5. Deglaze the pot with the chicken stock. Scrape down all of the sides to make sure you get all of the delicious seasonings and flavors into the broth.

6. Add in the soy sauce, brown sugar and ginger. Simmer the sauce for about 5-10 mins.

7. Add the chicken quarters back into the pot, place the lid on and bake for 45min to an hour.

8. The chicken will be flavorful. Enjoy!
